Fabulous Fish Pie

Ingredients.
1000g fish. A great mix would be some salmon, smoked haddock, cod and prawns. However, you can use what ever you have at hand or prefer.
1000g potatoes
450ml milk
A large carton of single cream (284ml)
150g cheese, grated. Mature cheddar works well.
1 onion chopped.
1 bay leaf
A good handful of dill, chopped
50g flour Prepare the potatoes, by peeling, cutting into slices or chunks, not too large!
Par boil for about 8-10 minutes.
Put the milk and bay leaf in a large pan. Add the fish and after it has come to the boil, simmer for about 5 minutes making sure the fish is cooked but not over done.
Remove the fish to let it cool ant then flake it into a buttered dish. At this point add the chopped dill.
Fry the onion in the butter until soft but not brown.
Add the flour to this and cook for about a minute.
Add the milk that the fish was cooked in.
Strain first to remove any small bones, bay leaf or fish skin.
Add the cream and prawns.
Cook the sauce until it has thickened and then add ¾ of the cheese.Pour sauce over the fish.
Lay the potatoes on top.
Sprinkle with the remaining cheese.Cook in an oven at 200 degrees for about half an hour or until the top is golden.

This pie can easily be made to suit those with dairy intolerances. Simply substitute the milk, cream and cheese for lactose free versions.
Any fish can be used although adding prawns gives a texture change.
If made in advance and kept chilled, then increase the final cooking time.
