Slow Roasted Belly Pork
last updated Wednesday 5th January 2011 - 21:54Not everyone likes to follow recipes and with this in mind, here is a recipe that you can alter and add ingredients that suit your own taste buds! Slow roasted to bring out the flavours and to produce tender meat.
Ingredients
A piece of belly pork to suit your needs. The ingredients below were sufficient for 3 people.
2 Apples, peeled and sliced into 8 pieces
1/2 Head of Celery cut into 2cm pieces
1 Onion roughly chopped
1 Leek, sliced into 2cm pieces
Method
Slice the skin on the pork into 1cm strips.
Place the pork on top of the prepared vegetables in a roasting tin.
Drizzle oil over and then add herbs. Sage goes well with pork.
Place in a hot oven, 200c approx, for about 30 minutes. Then turn the oven down or use the simmering oven in a range/aga type cooker. Cover the roasting pan with foil and leave to cook for about 5 hours.
20 minutes before required, remove the foil to let the skin crisp. If you want perfect crackling, remove it from the meat and place on a baking tray with the crisper side down. Keep an eye on it as it may brown too far.
