last updated Thursday 14th April 2011 - 22:35How To Make Chewy Meringue seems to be quite a popular request, so hopefully this recipe which Women's Thoughts was introduced to at a friend’s party (always the best places to glean new ideas) will answer the question. Pavlovas are very popular but this particular recipe has a few surprises!
2tsp cornflour
2 tsp vinegar
2 tsp vanilla extract
5 egg whites
300g/10oz caster sugar
50g/2oz rice krispies
For The Decoration
425ml/¾pt double cream
250g/½lb strawberries
Small packet of Revels
Chopped pieces of Mars/Snickers (your own choice)
Heat oven to 140c/fan 120/gas 1. Line a baking sheet with non-stick parchment. Blend the cornflour, vinegar and vanilla to a paste.
Whisk the egg whites until stiff, then gradually whisk in the sugar 1tbsp at a time, adding the cornflour paste whisk for 30 seconds after each spoonful , until you have a thick, heavy mixture.
Add the rice krispies to the mixture, then spoon onto the parchment. Make a slight dip in the centre of the meringue mixture to hold the cream.
Bake for 1hr, turn the oven off and leave to cool in the oven heat for an hour.
Whip the cream and pile into the centre of the meringue, decorate with the strawberries and dot the Revels and chopped pieces of Mars & Snickers around the meringue.
Divide the ingredients by half to make a second tier.
Your guests will truly enjoy the nostalgia of their childhood chocolates and the chewy meringue!!
